Asian style Salt & Pepper Calamari Recipe

The secret to extra crispy Fried Calamari:

 

Hello calamaris lover! Welcome to squid club. I’m a sucker who will always order fried calamari in every restaurant I go to, even if they don’t have it, I will demand this crispy squid what they call calamari to the chef! LOL. Can you imagine, even if it’s like a soup speciality restaurant hahaha. Dude. That’s how far I’d go. Lol.

First of all, this is one of those dishes that is very addictive. I’m warning you. I have been trying 3-4 different recipes, and on my last attempts, I finally got the perfect one! This right here is to die for! I’m not kidding. I served this on a family gathering and they were asking where I bought it from! I told them I cooked it myself and you know what? They didn’t believe me. Psssh. Rolling eyes. It was THAT GOOD. And then, I made this on a Sunday afternoon one time and that plate had gone with the wind. Hubby asked me to make it again for dinner. Whhhhaat??

Ok, this is the last warning I’m going to give you. You need to be ready when you’re cooking this, your whole kitchen is going to get oily. Oil is going to splatter everywhere, it’s going to get messy because you need so many different plate, your kitchen is going to smell like squid, probably that smell will lingers for about 3 hours hahaha, no. serious. But the end result is too satisfying. Believe me.

Here it is my Salt & Pepper Calamari Whoo hoo!!

Ok, Here are the ingredients that you will need: Eggs, All purpose Flour, Corn starch, Panko bread, Squid of course, Onion, shallots, garlic, green onion, Red hot chillies (optional).

 

There are 2 important step that you need to do before you do anything else

  • Squeeze 1/2 lemon juice and add into the cut squids. Marinate this for a minimum 10 minutes. The lemon taste will give your calamari a kick!
  • Fry about 1/4 cup of panko bread crumb (Indonesian translate: Tepung roti Jepang) Fry till golden brown and set aside. Fried panko bread and this recipe is the perfect match. I think that they’re probably siblings! No one every told me.

The Secret batter: You need to do this in this order.

  1. Coat the squid into flour (remember to season the flour with salt & pepper — even paprika powder if you wish)
  2. Then dip it the egg mixture
  3. The last is the tapioca flour or you can use corn starch

Tips for extra crunchy and crispy calamari. Fry twice. Yes Twice. So after you’re done frying the first batch until golden brown, pump up your heat to high and dunk those calamaries again and fry for 30-60 seconds.

 

When you’re done frying your calamaries, sautéed all these goodies in a pan and season them some salt & lots of pepper. Black or white is all up to you. But for this recipe, I prefer to have the white one.

When everything are aromatic, and your hubby upstairs went down to the kitchen and asked you what you’re cooking, then this is the right time to add your fried squid. Here’s how it looks like:

Resep Cumi Cabe Lada Garam dengan kualitas Restoran. Extra Crispy, garing, renyah banget. Ini dia rahasianya! psst: dan resepnya gampang banget masaknya lho!

Cumi Cabe lada garam ini adalah menu yang sering sekali di pesan di restoran Chinese. Kali ini, kita akan membuat resepnya yang rasanya ga kalah dengan restoran.

Bahan bahan yang di perlukan:

– 62 gr tepung roti jepang
– 2 butir telur
– 250 gr tepung terigu yang sudah di bumbui
– 125 gr tepung maizena
– 1/2 kg cumi yang sudah di lumuri oleh air jeruk lemon
– 2 siung bawang merah
– 3 siung bawang putih
– 1/2 bawang bombai di potong dadu kecil
– 3 cabe keriting
– 1 batang daun bawang yang kita gunakan hanya batangnya saja

Cara membuat adonan:

1. Lumuri cumi dengan tepung terigu, telur, terakhir adalah tepung maizena.

2. Pastikan minyak yang digunakan untuk menggoreng penuh dan banyak sehingga menggoreng cuminya bisa merata dan krispy. Masukan cumi satu persatu dan beri jarak antara cumi lainnya agar tidak menempel. Goreng hingga warna cumi kuning ke emasan. Untuk cumi yang extra garing, goreng cuminya 2x ke dalam minyak dengan api besar.

3. Tumis bumbu bumbunya. Dalam minyak goreng yang panas, masukan bawang bombai, bawang merah, bawang putih, cabe kriting dan daun bawang. Tumis hingga harum sekitar 2-3 menit. Lalu tambahkan lada dan garam secukupnya

4. Tepung roti jepang ini harus di goreng terlebih dahulu. Setelah di goreng, tambahkan bersama bumbu bumbu lainnya Lalu masukan cumi yang telah di goreng. Tumis hingga semua bahan tercampur.

5. Sajikan dengan nasi hangat.
