Resep udang goreng telur asin | salted egg shrimp

Ini dia, cara membuat udang goreng telur asin yang super crispy. Banyak juga di hidangkan di restoran restoran dengan nama Crispy Salted Egg Shrimp. Resep udang goreng telur asin adalah salah satu resep masakan yang sangat populer di Jakarta maupun Indonesia, ini adalah masakan yang sangat gampang dan praktis. Rasanya itu sangat kaya dengan citra rasa, ada rasa asin dan gurih sekaligus garing. Apalagi di hidangkan dengan nasi putih hangat di cocol dengan sambal botol. Sedap sekali! Masakan ini juga bisa dihidangkan untuk anak – anak. Namun, kali ini Mrs. Culinary menggunakan sedikit cabai keriting untuk menambah sedikit pedas pada Udang Goreng Telur Asin Ini.

Untuk membuatnya, bahan – bahan yang diperlukan adalah:

  • 25 Udang yang berukuran sedang
  • 120 gr tepung bumbu yang siap saji
  • 4 butir telur asin
  • 1 butir telur
  • 5 buah cabe kriting
  • 1 sdm bawang putih cincang (dari 4 siung bawang putih)
  • 1 sdm jahe cincang (dari 3 cm jahe)
  • 1 daun bawang
  • 1 sdt bubuk lada hitam

Cara membersihkan udang:

  1. Pertama tama, kupas udang  dan sisakan buntutnya. Dan untuk membersihkannya, irislah punggung udang dan tarik isi perut udang, balik udang dan ulangi prosesnya. Lalu cuci udang dalam air bersih.

Cara membuat tepung udang:

  1. Masukan air perasan jeruk lemon ke dalam udang dan tambahkan bubuk lada hitam dan 1 butir telur. Lalu kita aduk hingga rata.
  2. Setelah itu, lumuri udang dengan tepung bumbu yang siap saji
  3. Goreng udang di dalam minyak panas kira kira 2-3 menit hingga warna udang kuning kecokelatan dan tiriskan.

Cara membuat udang goreng yang ekstra garing:

  1. Besarkan api kompor dan goreng udang 1 menit saja. Lalu tiriskan
  2. Garingnya udang bisa dilihat dari permukaan udangnya seperti contoh di video ini. Atau bisa juga dengan dari bunyi udang seperti contoh video ini.

Cara membuat Telur Asin:

  1. Bersihkan telur asin dengan air dingin. Setelah itu, pisahkan kuning telurnya, karena yang akan kita butuhkan hanya kuning telurnya saja. Letakan telur asin dalam wadah yang tahan panas / ramekin.
  2. Kukus kuning telur asin 15 menit lamanya setelah itu, haluskan kuning telur dengan menggunakan garpu.

Cara memasak Bumbu Telur Asin:

  1. Siapkan 5 sdm  minyak goreng ddam masukan dan goreng telur asin ke dalam minyak. Aduk terus hingga berbusa. Setelah berbusa, masukan jahe cincang, bawang putih cincang dan cabe kriting yang sudah di potong potong
  2. Terakhir, masukan udang gorengnya dan juga daun bawang, aduk hingga semua bahan tercampur.
  3. Udang goreng telur asin siap di hidangkan dengan nasi putih hangat

Salted Egg Shrimp is a very popular dish in Indonesia. This recipe is very simple and only need few ingredients. The Salted Duck Egg Yolk  provide that rich flavor of fatty yolk paste to the dish. It has buttery aroma with a hint of spice kick and it will guaranteed to get you licking your fingers, slurping the flavorful sauce and another bowl of rice! The original recipe is actually calls for butter, but because I ran out of butter in my fridge, so for this recipe, I used vegetable oil instead. But it’s okay! It still tasted AHMAZINGLY Delicious!! The secret ingredients lies int eh Salted Duck Egg Yolk, and the ginger and the garlic and the prawns, sigh.. oke lies in all. It’s so good. Seriously. Ok, so here are the ingredients that you will need:

Ingredients:

  • 25 pcs of Medium Prawns
  • 1 cup of mix seasoned flour
  • 4 pcs of salted duck egg
  • 1 whole egg
  • 4-5 chili padi (for that extra kick spicy flavor!)
  • 1 tbs of minced garlic – from 4 cloves of garlic
  • 1 tbs of minced fresh ginger – from 3 cm of ginger
  • 1 spring onion (I only use the green part only for color)
  • 1 tsp of Fresh ground black pepper

Deveining the shrimp

  1. Peel raw shrimp, start underneath, where their legs are attached. Leave the tail
  2. Devein by making a shallow slit down the middle of the back to expose the black intestine. Lift out the black vein with the point of a paring knife and wipe it off on a paper towel. And Rinse with cold water

Battering the shrimp

  1. In a bowl, squeeze the lemon juice and add a generous amount of fresh ground black pepper to the shrimp and 1 medium egg. Mix and combine until everything are incorporated.
  2. Dip shrimp into the mix seasoned flour (buy the instant package one)
  3. In a large wok, heat oil to 350 degrees F and drop the batter shrimp into the hot oil, fry for 2-3 minutes or until golden brown. Remove and drain on paper towel.

PROTIP! How to Double fry the shrimp for Extra Crispy:

  1. Crank your heat to high and fry the shrimp again for about 1 minute. Remove and drain on paper towel
  2. The sound of the crisp should be a harmony to your ear, the look of the crisp should be nice a golden brown, or sample in the video.

Preparing the Salted Duck Egg

  1. Start by separating the egg yolk and the egg white (we’re only going to need the egg yolk). (I used 4 yolks in this recipe because I like the creaminess it adds to the sauce — you can always adjust the number of yolks you like, depending on how creamy or dry you like the sauce to be)
  2. Put the yolk in a ramekin and steamed the egg yolk for 15 minutes. Once steamed, mash the egg yolk with the back of the fork and set aside.

Stir Frying the Shrimp

  1. In a skillet, add 5 tbs of vegetable oil/ or you can use 3-4 tbs of butter and let it hot for 30 seconds
  2. Add the mashed salted egg to the oil and stir constantly because the sauce will bubble and pop. And as you stir, the sauce will become more creamy. After the salted egg has become creamy / foamy, add in the minced garlic, minced fresh ginger and the chili padi (remember you can omit this if you don’t like spicy), keep stirring until everything are incorporated.
  3. Last, add in the fried shrimp to the sauce and stir until well coated. Sprinkle some spring onion to make the color more vibrant. (Note, I didn’t add salt to this, since the salted egg has already salty – but you will need to taste your dish according to your preference)
  4. Remove the heat and serve prawns immediately with warm rice.
